Chorba, a comforting soup from the Maghreb perfect for the cold weather

When the temperatures become freezing, the desire for comfort is felt… Make way for hot drinks, soups and broths! What could be better than a good chorba to warm up? This traditional soup, originally from the Maghreb, combines spicy flavors and satiating foods. A must of the oriental cuisine, ideal to (re)take strength!

Why is chorba so popular in winter?

Because it’s a perfect alternative to vegetable soup! With its thick broth and highly nutritious ingredients – such as meat and angel hair – chorba is invigorating, filling and warming. It is one of the most popular soups during Ramadan. The rest of the year, it is served as lunch or dinner, as it is so rich.

Like the Italian minestrone, chorba is full of vegetables (tomatoes, carrots, chickpeas, zucchini, celery) and contains small pasta that varies according to the recipe: vermicelli, angel hair or bird tongues. It is usually garnished with pieces of meat, such as lamb, beef or mutton, and owes its typical color to tomato concentrate. Of course, the oriental recipe obliges, the chorba includes its share of spices and fresh herbs.

How to prepare a good chorba?

If you opt for a meat version, you will need to brown your meat in a casserole dish with olive oil and a chopped onion. Then add the vegetables, cut into small portions. Cook for about 5 minutes, then sprinkle the spices: turmeric, paprika, ginger and cinnamon. Add salt and pepper! Then chop the fresh coriander and add it to the pot, taking care to reserve a few leaves for decoration.

Then pour in water (about one liter) and simmer for 20 minutes on high heat. Add two tablespoons of tomato paste, the vermicelli and the chickpeas. Continue cooking for 10 minutes uncovered. Finally, decorate your chorba with fresh coriander and enjoy!
