Mloukhiya, a typical Tunisian delight

What is this black sauce that Tunisians love?

This is mloukhiya, a typical Tunisian dish prepared from powdered jute plant, which mainly grows in Asia and Africa.

Other variations throughout the Arab world

Simmered for 4-5 hours with olive oil, boiling water, onions, coriander powder, caraway, paprika, harissa, tomato sauce, crushed garlic and bay leaves, it is often accompanied by beef.

Although the result is – let’s face it – not very appealing, the dish is rich in flavor and is an icon of Tunisian culinary heritage. Other variations of Mloukhiya exist throughout the Arab world, notably in Egypt and Lebanon, where it is eaten in soup or with chicken.
