Gulfood 2022: the 5 culinary innovations of the year

Gulfood 2022 is being held at the Dubai World Trade Center for its 27th edition. This year, the food and beverage show is focusing on sustainability and anti-waste. It showcases the latest innovations from around the world in the sector.

More than 4,000 companies from 120 countries are participating in Gulfood 2022, giving a glimpse into new trends in culinary, sustainable and carbon-neutral packaging. But here are the 5 highlights of the forum!

1. Vegan fish

After vegan beef, it’s tuna that is in the spotlight. The French company Kokiriki presented Veg-Toona, a vegan alternative made from soy proteins, without GMOs or palm oil, to be eaten hot or cold.


2. Date sugar

Grind the natural fruit into a fine powder, it becomes a natural sugar for pastries or coffee. Date sugar has already found its way to the United Arab Emirates, the United States and Bangladesh.

 

3. Nut-based cheese spread

Abu Dhabi-based snacking giant Agthia and Freakin’ Healthy have launched the first cheese made from nuts processed using high-pressure technology. Produced locally, the cheese is available in several flavors: Original, Chili Spice and Smoked Paprika.

 

4. Charcoal bread

We eat with our eyes first and black is the culinary trend in the Emirates. After squid ink, charcoal is the new star for its color. German companies Abel & Schafer and Truebell are hoping to introduce a flour derivative to the market in the future.

 

5. Frankincense ice cream

Finally, Mazoon Dairy of Oman presented a premium ice cream flavored with the scent of incense. To be tasted also in milk!
